Questions about my hardware specs for new 2010 MBX servers

As I mentioned in a different topic, I have a 3 year old exch2010 system.  It currently has 3 message DBs on a single MBX server.  The DBs are 250 Gb a piece.  I am going to replace the server by bringing up three new mbx servers(1 per DB).  I will then move users individually to give them a clean start in the DB.  My questions are about the physical servers:

1.  I am being given servers with 2-8 core processors, 32 Gb. RAM and 8 900 Gb Hot Swap SAS drives.  If I follow the plan of the current server, two drivers will be RAID10+Hot Spare to be the C Drive(~900Gb usable) to hold programs and I think the log files for the DB are there.  Four other drives will be RAID10+HotSpare D Drive(~1.8Tb Usable) that holds the actual DB.  Is this still a smart way to do it? 

2. I considered just making one big RAID10+Hot Spare Device which would use 7 disks total and then Format a C Drive that is a more realistic 500Gb and leave the rest to make a data drive.  Either way, there is only 1 RAID card, so different devices are really not very separate.

3. Since they share a RAID Card, does it matter if the logs go on the data drive or the C Drive?

4. More of a procedural, should I put all three out there at once or just one server at a time?
