Questions about migrating from Exchange 2003 to Exchange 2010

Hello,

I have the following configuration:

3 server domain
- Domain Controller DC1 (domain controller, Global Catalog, file server)
- Exchange Server EXCH1 (Exchange 2003 server, domain controller, Global Catalog, VPN, RRAS, OWA)
- RDP Server RDP1 (RDP Server)

We want to do the following:
- Setup a new server for Exchange 2010 on Server 2008 R2
- Install Exchange 2010
- Migrate the users to the new server
- Remove the old Exchange server from AD
- Rebuild old Exchange server as Server 2008 R2 & Migrate our DC1 functions and data to this server
- Retire old server

I've allocated the following time and checklist.  If anyone has any input on the steps and or hours I've proposed, I would appreciate the feedback.

8 hours - Cleanup & healthcheck on AD
8 hours - Build New 2008 R2 Server
4 hours - Prep for Exchange 2010 (extend schema, run through check lists, etc)
8 hours - Install Exchange 2010 server
4 hours - Customize WEB Access, SSL, SMTP, ...
8 hours - Test & then move existing mailboxes to 2010 server
2 hours - Retire old server from AD
8 hours - Rebuild old Exchange server to 2008 R2
8 hours - Migrate data from old DC1 server to new DC2 server (including remapping drives, etc.)
2 hours - Retire old server
23 hours - Update to Outlook 2010 on 17 workstations

This is my general understanding of what I need to do after reading the implementation document from the Exchange server 2010 DVD, petri documents, petenetlive document, and past experience.  Does anyone see anything I've missed, or have thoughts on the times I've allowed?
