Exchange 2007 to Exchange 2013 with Office 365

Currently we have Exchange 2007 running on Server 2003 on-prem. We have just completed a staged migration of all mailboxes to Office 365. We will be moving our MX record to Exchange Online in the near future. We have DirSync installed for user and password management. ADFS is not running in our environment

All mailboxes will be managed in Office 365, no mailboxes on-prem will be receiving or sending email. One of the original benefits of Office 365 we saw was no longer running an Exchange Server on-prem. After reading several articles this turns out not to be a good idea in our case. Since we are running Exchange 2007 on-prem we were able to get a Exchange 2013 Hybrid Edition key. 

What I would like to do is once we move the MX record I would like to install Exchange 2013 on-prem utilizing the Hybrid setup and completely decommission the Exchange 2007 install. Is this possible and are there documented methods for this type of deployment?
